Colorado Style Beef Enchiladas! DONT DO IT MY WAY!

Wednesday night was leftover night!

Thursday we had Breakfast for Dinner. Everyone seems to love that meal.

Biscuits from the can- I HATE these! Love to eat them but getting them open causes panic for the CAT and I both.
Bacon- The Cat was waiting every minute
Gravy- from scratch!
Eggs- if you want them, you cook them- is my theory at the moment.
He is pretending to be a sweet cat. He loves his Daddy.


Now to the new meal! 
Going to try...  where did that CAT move my cookbook????
OK found it.  This is from a great cook book.
Don't Panic - Dinner's in the Freezer: Great-Tasting Meals You Can Make Ahead

It is on page 127 if you have the book. I love this book because it gives you all the information on how to make freezer meals. I am making it for 3 meals, so I hope it is good. Keep in mind there are many modifications that are mine in this- so it is not exactly the same as in the book!

Colorado Style Beef Enchiladas
3 3/4 lbs of hamburger
3 onions cut up- I used my food processor that I found!!
1 pack of taco seasoning
3 small cans of mild green chilies, chopped
3 oz jars of green chili salsa
1 cup of water
36 corn tortillas
3 lbs of shredded cheese  

Sauce-
3- 15 oz cans red enchilada sauce
3- 15 oz cans green enchilada sauce
1 Cup Sour Cream
9 T of Milk

I try to make cooking as easy as I can so before left to do all my running around, I threw the hamburger, onions into the crock pot to brown and cook. It really is an easy way to brown hamburger meat. I also use crock pot liners that make my life  so easy. The best place I have found to get them is amazon- you can check them out here if you want.

I use a tool to break up the hamburger, you can see it in the picture. It is worth its weight in gold. Everyone should have one. You can check on out here.

Ok we are going to stop here...  If you want to try these...  get the book and follow the directions in the book.
Mine where edible and good in a different sort of way. I did something wrong and ended up with about 50 times more sauce then I needed and the enchiladas where more like a Dip then a Enchilada!


Hey have the fun of cooking is trying new things, we wont let Wes know there is one out in the freezer to eat! I'll surprise him! 

Saturday was make it yourself day! Rhi and I went with a sandwich.

Corn Beef and Cabbage-One of Demon Cats Favorites

Corn Beef and Cabbage

He is mad because I went shopping today, I cant take him with me.

For this you need
A Head of Cabbage
I use 2 cans of Corn Beef
Sick of butter
Some salt and pepper if you want




Wash the cabbage, cut it up put it in a pot of water and start to boil. Boil it until it is soft BUT dont cook it to long OR you will have sauerkraut. Different dinner!




The fun of making this dish is getting the cans of corn beef OPEN. I always feel like I have been in a war after I get them open. BE CAREFUL the edges are sharp. After I finally get them open, I use a knife to loosen it from the edges, then bang it upside down on the counter and usually they will come out.





Now we have his attention! He loves corn beef but hates it fried!
He has to keep an eye on me to make sure I dont put it in the frying pan after I cut it up.
He is now waiting at his bowl because he has been good while I am fixing the food so he wants HIS corn beef.
It is delivered!
The rest of the Corn Beef goes in the frying pan, cook it as much as you want.
After the Cabbage is boiled, drain it, put butter in the bottom of the pan, it will melt fine, replace the cabbage, put in the corn beef, stir!



Now it is time for US to eat. Yummy!

Back to the store again! Rose Buds- What is this???

I hate food shopping. I really really hate it! I do. I am going more often because I seem to change my mind on what I want to cook for the week. I am going to try Mondays and Wednesday or Thursday. This way there will also be less to carry in. This may change after school gets out and I dont have to leave the house every day.
I am scared that I only spent 67 dollars today but I got everything on my list.

The CAT likes rice. Who knew??  He was so interested in what I was eating for lunch. The leftover Chicken Terr. that I fixed him a little bowl. He loved it.

What did I cook today, you ask?  I call them Rose Buds. I dont know why I call them that, it is a family thing I guess. That is what my Mama called them so that is what I call them. What are they?

Hamburger patties- for how every many you want to make. Dont use the supper lean ones.
Carrots- I use the baby ones because I am lazy and dont want to peel them.
Potatoes- for how ever many hamburger patties you make, I have to peel these and this makes me sad


Tear off some tinfoil you are going to make packs... I do it this way because it is easier to wrap them. I use a small baking pan so I can stack everything.


Put on the hamburger patty, salt and pepper if you want.

Put the cut up potatoes on top of that, salt, pepper and butter if you want.

Put carrots on the top after that!

Tear off another piece of tinfoil put on the top and crimp the edges so it is all sealed up nice and tight.

Toss on to a cookie sheet and cook at 350 for about 1 hour.


BE CAREFUL when opening up the package because there will be steam and sometimes oil or butter that will come out. It is not fun if it gets you!

The verdict-
Wes, his first question was what is this? I thought he was talking about the food, he was talking about the plate! I use paper plates and I guess he hadnt seen a real plate for a while. His next next reaction was- are there two hamburger patties in here? Turns out it was plenty to fill him up!

Rhi- She liked it! She even ate some of the hamburger. She was happy that I remembered Not to put pepper on hers.

Me- It was great, a little more work then I like to do, but it was really good so worth it. 

The CAT- He doesnt care, he had his rice today.

Sunday is the Hot Dog Race at Top Slots Race Way. This is where my Wes and Rhi race slot cars. They have a lot of fun and it is a great group of people.

I dont like Hot Dogs. I can eat them but dont care to very often. While getting rid of clutter I was able to find my picnic basket and get it restocked again. We are going to have sandwiches picnic style there today, while they race. Easy meal and wont have to stop and get takeout after the races!

Wes won the Hot Dog race they have every Sunday! He is now the Big Wiener for the week!

Slow Cooker Chicken Teriyaki with Pineapple

6:40 am- Remembered to put the stuff in the bowl in the slow cooker and turned it on! Yes I had a helper. Boe was very confused as to why I was up and moving around this early in the morning.




Now back to bed we go until Wes gets off work.

When Wes got home, got up and made instant white rice....  It was easy, just remember bring the amount of water to boil the add the same amount of rice. Stir, take off heat and wait 5 minutes.  I wanted extra so 2 cups of water, 2 cups of rice. It must be boring making rice because Boe didnt want to help.


Now for the dinner.....

Me- I liked it. The vegetables really soaked up the sauce so they where tangy. I am looking forward to trying it tomorrow. It seems like dishes like this taste even better the next day. Easy to make, tasted good, will make again.

Wes- I am starting to figure out he doesnt like the crock pot. His reaction was, I think you over cooked it, this before he gets to close to it. Next reaction, it all tastes the same, remember the ham? The ham that he hated and everyone else loved. Two bowls later, it was edible his final verdict. It may be the pineapple. The ham was a pineapple ham.

The Demon Cat- He could care less, had no interest at all in even wanting any.

I Didn't Want a Cat

I am NOT a Cat person. Let's start with that. I ended up with this Cat. We are on an adventure of learning about each other. I am not even really sure it is a cat. I think it is some kind of new Demon.

One of my challenges in life besides the CAT is my family's wanting dinner. I kept hearing- I'm Hungry...  I would ask... What do you want to eat? Blank stares with the cat laughing at me. Since NO ONE know what they want to eat, I will cook whatever I want to eat and if they dont like it there is always freezer sandwiches and can goods that they can fix. I have been doing this for about a week and I haven't heard- I'm Hungry once. Works for me!!!  I figured a blog would help me figure out what I have cooked on what day so I dont cook the same thing every week. I am a creature of habit and can fall into a routine that I wont budge from.

Slow Cooker Chicken Teriyaki with Pineapple

Found this great recipe on Utah Coupon Deals Blog. If you click on the link above it will take you to the recipe. I prepared as much as I could tonight because tomorrow is my sleep day. I work one night a week, yes I know a hard life.

I didnt take pictures of the preparations because I was at war with the CAT. His name is Boe by the way.  I am going to copy part of the recipe and walk you thru it with the CAT and I.

Dice the chicken and put into crockpot- Ok to do this, I don't touch meat, but I really really really want to try this. I have three chicken breasts, no bones. I suit up.....  searching to find the latex gloves, I have to have them, we dye hair around here. The CAT helps me look. Move cat, search cabinet, while moving cat and finally find the gloves. First pair of gloves in the trash because he didnt like the gloves and wanted to take them off me. Get him calmed down and give him the gloves he wanted. New gloves. After washing the chicken, I start to cut it up. Mama is doing something new and since he can jump to the counter I am keeping an eye on him......  when he goes to jump I hiss, this goes on the whole time I am cutting up the chicken. Finally done. Next step-

Add enough teriyaki sauce to coat the chicken thoroughly, be sure to stir it around with the chicken and let it soak a bit while you are getting the pineapple ready

Can do, teriyaki sauce in.. but problem, I didnt bring the pineapple can with me and it is around the corner. I have to walk backwards to get to the pantry while watching the CAT. He is watching me like I am crazy, guess I dont walk backwards a lot. Open the door, snatch the can, hiss at the cat who was thinking about jumping.

Everything else went well after that. He didnt like it when I took his gloves away but I cant just let him have them he might chew them up and choke.


All I have to do in the morning is just put it in the crock pot when I wake up and dinner will be ready before I go to work!
