Tonight we had sloppy joes and I used the left over hamburger meat!
Put some french fries on a baking sheet and it was an easy meal. Wonderful since I am very tired tonight for some reason.

Tacos and Bennie Wennies and Pizza!
Saturday- It was a friend of mines birthday so I made more cheese dip and 2 crock pots of Bennie Weenies. I make my bennie wennies with little smokies, pork and beans, a little liquid smoke, some bbq sauce, and a little brown sugar. Mix it all up and then put it on low and you are good to go!
Sunday- we where at the track- Top Slots. I was so tired I forgot to pack the sandwich stuff so we ordered pizza. It was ok but the more we eat at home the less we like to eat out.
BBQ Slow Cooker Chicken
Crock pot BBQ chicken...
4-6 pieces boneless skinless chicken breast
1 bottle BBQ sauce
1/4 cup vinegar
1/4 cup brown sugar
1/2-1 tsp garlic powder
you can put the chicken in the crock pot frozen
Cook on low 4-6 hours.
A friend of mine sent this to me. Thank you Cheri! She tried it and her family liked it. I tried it last night and Wes really liked it! He hates the Crock pot so this is a big win! The CAT was very interested in me making it, but he didnt like it after I cooked it. I dont think he likes BBQ sauce. I like it to, very very easy to make and something different!
It has been put in the keeper pile.

Dons Alley and Breakfast
Tuesday, Wes was sweet and took me out to dinner because he knew I didnt feel good.
The Cat and I fought all day... You could just see it on his face he was in a bad mood. His fun thing for the day was to hide places and try to jump out and kill me.
He is telling Tyler here how mean I am, and how sweet he is..... NOT
Wes took me to Dons Alley in Del City. I havent eaten there in about 10 years. Wow, I think it is one of my new favorite restaurants! I am very picky about restaurants, so this is a treat. The place smelled good walking in. Cute and clean. The server was great. It is home style cooking a big plus in my book. The price was reasonable for what we ordered. I LOVED my terr. chicken. It is always hit and miss at places- I am happy to find a place that can cook it correctly.
Wednesday was breakfast night. I bought the wrong gravy mix. The minute Rhi and I took a bite out of it, we spit it back out. We dont like sausage gravy! I had to make some from scratch but it all turned out fine. Biscuits and gravy and sausage cooked in bbq sauce. Breakfast is still our happy meal of the week.
Tomorrow I am trying a new slow cooker meal. We will see how I do with it!

Sandwiches, Freezer Meal, Bread and Rhi Brownies!
I got to spend a rare day at home on Sunday so it was sandwiches and canned soup day. The family is noticing a difference in eating at home. On the way to the slot car track, Top Slots, they stopped and got fast food. They both didnt feel good for the rest of the night. Rhi has been helping a lot when I am in the kitchen. I hope we have enough time to make Brownies tomorrow!
Monday- I am doing a store bought freezer meal for tonight- Chicken and Vegetable rice bake from Stouffer's.
Also bread from the bread machine. I love that you put it in like this-
And it comes out like this-

Colorado Style Beef Enchiladas! DONT DO IT MY WAY!
Wednesday night was leftover night!
Thursday we had Breakfast for Dinner. Everyone seems to love that meal.
Biscuits from the can- I HATE these! Love to eat them but getting them open causes panic for the CAT and I both.
Bacon- The Cat was waiting every minute
Gravy- from scratch!
Eggs- if you want them, you cook them- is my theory at the moment.
He is pretending to be a sweet cat. He loves his Daddy.
Now to the new meal!

Don't Panic - Dinner's in the Freezer: Great-Tasting Meals You Can Make Ahead
It is on page 127 if you have the book. I love this book because it gives you all the information on how to make freezer meals. I am making it for 3 meals, so I hope it is good. Keep in mind there are many modifications that are mine in this- so it is not exactly the same as in the book!
Colorado Style Beef Enchiladas
3 3/4 lbs of hamburger
3 onions cut up- I used my food processor that I found!!
1 pack of taco seasoning
3 small cans of mild green chilies, chopped
3 oz jars of green chili salsa
1 cup of water
36 corn tortillas
3 lbs of shredded cheese
Sauce-
3- 15 oz cans red enchilada sauce
3- 15 oz cans green enchilada sauce
1 Cup Sour Cream
9 T of Milk
I try to make cooking as easy as I can so before left to do all my running around, I threw the hamburger, onions into the crock pot to brown and cook. It really is an easy way to brown hamburger meat. I also use crock pot liners that make my life so easy. The best place I have found to get them is amazon- you can check them out here if you want.

I use a tool to break up the hamburger, you can see it in the picture. It is worth its weight in gold. Everyone should have one. You can check on out here.

Mine where edible and good in a different sort of way. I did something wrong and ended up with about 50 times more sauce then I needed and the enchiladas where more like a Dip then a Enchilada!

Corn Beef and Cabbage-One of Demon Cats Favorites
Corn Beef and Cabbage
He is mad because I went shopping today, I cant take him with me.
For this you need
A Head of Cabbage
I use 2 cans of Corn Beef
Sick of butter
Some salt and pepper if you want
Wash the cabbage, cut it up put it in a pot of water and start to boil. Boil it until it is soft BUT dont cook it to long OR you will have sauerkraut. Different dinner!
The fun of making this dish is getting the cans of corn beef OPEN. I always feel like I have been in a war after I get them open. BE CAREFUL the edges are sharp. After I finally get them open, I use a knife to loosen it from the edges, then bang it upside down on the counter and usually they will come out.
Now we have his attention! He loves corn beef but hates it fried!
He has to keep an eye on me to make sure I dont put it in the frying pan after I cut it up.
He is now waiting at his bowl because he has been good while I am fixing the food so he wants HIS corn beef.
It is delivered!
The rest of the Corn Beef goes in the frying pan, cook it as much as you want.
After the Cabbage is boiled, drain it, put butter in the bottom of the pan, it will melt fine, replace the cabbage, put in the corn beef, stir!
Now it is time for US to eat. Yummy!
