Crock Pot Baked Potatoes- Easy Meal- So Easy!

Love this meal, it is the easiest meal ever! I made this Thursday night.
Look at these potatoes-

Before you freak out and swear you will never eat at my house. After the CAT was done looking at the potatoes, I washed down the counter and washed the potatoes. We are still working on manners and I guess he just had to see the potatoes.

Yes I used the crockpot liner.

Wash and dry the potatoes and toss them in there. No water.
Cook on low all day and they are done when you are ready to eat dinner....

We usually top them with ham, I found this great already cut up ham at crest the other day. Love it. It was good and easy!

Hashbrown Casserole for the Crock Pot

Tuesday was a crazy day. My car broke down, so I got a little upset. Wes was nice enough to take us out to dinner at Don's Alley. Rhi LOVED her cheeseburger! She doesnt like much so this was a huge surprise.

Wednesday since I have no car, I was able to do some cooking. Trying a new recipe- yes everyone hide. These might work better if I would follow the recipe and not add what I wanted to it. I will give you my recipe of what I did, then I will give you the recipe of what they wanted me to do. Big Thank You to Terri for sharing this with me.

Hey mine turned out great! The only downside to it- there was too much for just 2 people and I dont think it will make good left overs.
Wes' reaction was funny. He asked what was for dinner and I responded a new meal...  Goaning...   where is it??  What is it??  Told Rhi, your mother just cant help it.  Then he tasted it and said it was good!!!  

Hashbrown Casserole for the Crock Pot-
1- 28 oz bag of Potatoes O'Brien (cause I wanted onions and peppers)
12 eggs
1 Cup of Milk
1 T ground mustard
Leftover Bacon
Salt and Pepper
1 lb of shredded cheese

Directions-
Spray Crock pot and place potatoes evenly in the crock pot. You know I used my slow cooker bags.



Ok fine I spilled some
Crack eggs in a large bowl, mix well and slowly with a wisk
Add milk and ground mustard, salt and pepper. Stir
Put the bacon on top of the potatoes
Put cheese on top of that
Mix it up
Pour the egg mixture over everything.
Cook on low for 6 to 8 hours.

The original recipe that I started with goes like this, if you want to try it the other way. 
Breakfast casserole in the crock pot! Cooks while you sleep! Sounds perfect for a Sunday morning and great for company!
Ingredients:
1 bag 26 oz. frozen hash browns
12 eggs
1 cup milk
1 tablespoon ground mustard
1 16 oz. roll sausage
Salt and pepper
16 oz. bag shredded cheddar cheese
Directions:
Spray crock pot and evenly spread hash browns at the bottom.
Crack 12 eggs in a large bowl.
Mix well (and slowly) using a whisk.
Add the milk.
Go ahead and sprinkle in the ground mustard. This might sound like a weird ingredient, but I've come to love (and use) this in most of my recipes.
Add plenty of salt.......and lots of fresh pepper. Mix well and set aside.
Cook the sausage on high heat, drain and set aside.
Add sausage on top of hash browns.
Is this enough cheese? Maybe? Probably. Throw the whole big bag in there.
Mix it up well. Or good, depending on where you're from.
Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it's spread evenly.
Turn the crock pot on low for 6-8 hours. If you sleep more than that and lack the discipline to get up just to turn off the crock pot (like myself), feel free to make this the day before and keep it on warm all night. That works really well in our house. Now go wash your face, watch some E!, and get in bed. Go ahead and close your eyes, and fall asleep
